Ingredients

  • 1 lb. pork, cut into 3/4-inch cubes
  • 1 Tbsp. taco seasoning mix
  • 2 tsp. vegetable oil
  • 8 oz. chunky salsa
  • 1/3 cup peach preserves

Instructions

  1. Coat pork cubes with taco seasoning.
  2. Heat vegetable oil in a large nonstick skillet over medium-high heat.
  3. Add pork and cook until browned, stirring occasionally.
  4. Add chunky salsa and peach preserves to the pan.
  5. Lower heat, cover, and simmer for 15 to 20 minutes.
  6. Serve hot with rice and a mixed bean salad.
