Peach Rice Salad

A refreshing peach rice salad combining sweet peaches, crisp celery, and tangy vinaigrette, perfect for light lunches or summer gatherings.

Ingredients

  • 1 1/2 Tbsp. water
  • 1 tsp. ascorbic-acid mixture for fruit
  • 2 c. sliced peaches
  • 1/4 c. salad oil
  • 2 Tbsp. wine vinegar
  • 2 Tbsp. soy sauce
  • 1 tsp. seasoned salt
  • 2 c. cooked rice, chilled
  • 1 c. thinly sliced celery
  • 1 Tbsp. minced onion

Instructions

  1. In a bowl, in water, stir the ascorbic-acid mixture for fruit until dissolved.
  2. Add the sliced peaches to the mixture.
  3. Gently toss the peaches until thoroughly coated.
  4. Let the mixture stand for 10 minutes.
