Ingredients

  • 2 peaches, cut to bite size
  • 3 green onions, chopped
  • 1 avocado, cut to bite size
  • 1 cup corn kernel
  • 1/4 cup safflower oil (or other light oil)
  • 2 lemons, juice of
  • 1/2 teaspoon sugar
  • 1 pinch salt

Instructions

  1. Prepare the salad ingredients including peaches, green onions, avocado and corn and put all in a bowl, mixed well.
  2. Juice the lemons and add oil, sugar and salt. Whisk till blended.
  3. Pour dressing over salad just before serving.
