- Cook water, sugar, and Karo syrup until a very hard ball forms, using a candy thermometer.
- Beat egg whites and pour into the hot syrup mixture.
- Beat rapidly while adding the syrup to the egg whites.
- Add vanilla, then continue beating, gradually adding confectioners sugar until three-quarters of the box is used.
- Warm peanut butter for spreading.
- Sprinkle confectioners sugar on wax paper and place about one-third of the dough on it.
- Roll the dough thin and spread with peanut butter.
- Roll up like a jelly roll and wrap in wax paper. Chill for about 20 minutes.
- Repeat the process with the remaining dough in two parts.
- Slice into small pieces to serve.
