Peanut Pork

Ingredients

  • pork loin
  • unsalted peanuts
  • flour
  • salt and pepper
  • oil for frying
  • egg and water wash

Instructions

  1. Slice pork lengthways into about three fillets, then slice into bite-sized pieces.
  2. Place unsalted peanuts in food processor with knife blade; process until they are the consistency of flour.
  3. Be careful not to make peanut butter.
  4. Mix peanut flour with all-purpose flour (half and half).
  5. Add salt and pepper to taste, set aside.
  6. Beat one egg and add as much water.
  7. Dip meat in egg wash, then into peanut flour.
  8. Drop into hot grease and fry until golden brown and crispy.
