Ingredients

  • 1/4 cup smooth peanut butter
  • 2 egg whites
  • pinch of salt
  • 1/2 teaspoon vanilla
  • 2/3 cup sugar
  • 1 (3 1/2 oz.) can flaked coconut

Instructions

  1. Melt peanut butter over low heat and cool for 3 to 5 minutes.
  2. Beat egg whites, salt, sugar, and vanilla until soft peaks form.
  3. Fold in shredded coconut and melted peanut butter.
  4. Drop rounded teaspoonfuls of the mixture onto a greased cookie sheet.
  5. Bake in a 325°F oven for 20 minutes.
  6. Let the cookies stand for 1 minute after baking.
  7. Cool on a wire rack before serving.
