Ingredients

  • 1 (29 oz.) can pear halves
  • 1/3 cup sugar
  • 1 envelope unflavored gelatin
  • 1/4 teaspoon salt
  • 3 slightly beaten egg yolks
  • 1/4 teaspoon grated lemon peel
  • 1 tablespoon lemon juice
  • 3 egg whites

Instructions

  1. Drain pear halves, reserving 1/4 cup syrup and 1 pear half. Mash remaining pear halves and drain.
  2. Combine the 1/3 cup sugar, gelatin, and salt in a saucepan.
  3. Stir in the reserved pear syrup, egg yolks, lemon peel, and lemon juice.
  4. Cook and stir until the mixture is slightly thickened.
  5. Add the mashed pears and let the mixture cool until it mounds when spooned.
  6. Beat egg whites to soft peaks.
  7. Gradually add the remaining sugar, beating until stiff peaks form.
  8. Fold the beaten egg whites into the pear mixture gently.
  9. Turn the mixture into a prepared pie shell and chill until set.
  10. Garnish with whipped cream and the reserved pear half, sliced.
