Ingredients

  • 1 egg white
  • 1/3 cup water
  • 1/2 cup nonfat dry milk powder
  • 1/3 cup granulated sugar
  • 3 tablespoons lemon juice
  • 1 egg yolk
  • 1 (9 oz.) can crushed pineapple, undrained

Instructions

  1. In a small electric mixing bowl, combine egg white, water, and nonfat dry milk powder.
  2. Beat at high speed until stiff enough to hold shape.
  3. Reduce to low speed and gradually add granulated sugar and lemon juice.
  4. Return to high speed and continue beating about 5 minutes or until stiff.
  5. Blend in egg yolk.
  6. Fold in crushed pineapple.
  7. Spoon mixture into ice cube tray.
  8. Place in freezer for about 2 hours or until thoroughly chilled.
