Ingredients

  • 1/4 lb salt pork, chopped fine
  • 1 onion, chopped
  • 1 cup canned tomatoes or 2 Tbsp tomato paste
  • salt to taste
  • pepper to taste
  • thyme to taste
  • 1 cup pigeon peas or black-eyed peas

Instructions

  1. Fry the salt pork to render the fat.
  2. Add chopped onion, tomato (canned or paste), salt, pepper, and thyme to the pan.
  3. Stir all ingredients together and continue cooking for a few minutes.
  4. Add peas and 3 cups of water; bring to a boil.
  5. Stir in the rice, cover, and cook until the rice is tender and the water is absorbed.
  6. Add another cup of water, cover, and let the rice swell.
  7. Add more water if needed and cook until desired tenderness is achieved.
