Pecan Squash Casserole

Ingredients

  • 1 lb. yellow squash
  • onion
  • 1/2 stick margarine
  • 1/2 c. mayonnaise
  • 1 1/2 tsp. sugar
  • 1 egg, well beaten
  • 1/2 c. grated sharp Cheddar cheese
  • 1/2 c. chopped pecans
  • 1/2 c. crackers

Instructions

  1. Preheat oven to 375°.
  2. Melt butter in casserole first.
  3. Steam squash with onion until tender.
  4. Drain and mash thoroughly.
  5. Add other ingredients to mashed squash, then put in casserole on top of butter.
