  • 1 lb. boiling potatoes
  • 1 1/2 lb. tomatoes

  • 2 Tbsp. margarine
  • 1 large onion
  • 10 to 12 basil leaves

  1. Cut the red and yellow peppers lengthwise and then into 1/2-inch strips.
  2. Dice the boiling potatoes.
  3. Coarsely chop the tomatoes.
  4. Place olive oil and margarine in a braising pan.
  5. Heat on medium flame and when the butter melts, cook the sliced onion until it softens and becomes light golden.
  6. Add the peppers, potatoes, tomatoes, 4 basil leaves, salt, and pepper to the pan.
  7. Stir the mixture, cover, and cook over low heat for about 40 minutes, being careful not to overcook the potatoes.
  8. Before serving, coarsely chop the remaining basil.
  9. Transfer the stew to a serving dish and sprinkle with chopped basil.
