Ingredients

  • 1 lb. can corn, drained
  • 1/3 c. finely chopped red pepper
  • 1/3 c. finely chopped green pepper
  • 1 Tbsp. plus 1 tsp. vegetable oil
  • 1/3 c. finely chopped onion
  • 1/4 c. wine vinegar
  • 1 Tbsp. plus 1 tsp. sugar
  • salt and pepper to taste

Instructions

  1. Combine all ingredients in a bowl.
  2. Mix well and chill several hours to blend flavors.
  3. Mix well again before serving.
