- Dry the steaks.
- Press pepper into steaks with heel of hand. Let stand 30 minutes. Meanwhile, mix butter, tabasco sauce, worcestershire sauce, lemon juice, cognac and chopped parsley. Put a light layer of salt over heavy skillet on HIGH heat.
- When the salt yellows, add the steak.
- Lower the heat to moderate. Cook to desired doneness.
- Heat the butter, worcestershire sauce, and tabasco on low; add cognac and flame.
