Peppercorn Tuna
Ingredients
- 1 tablespoon plus 2 teaspoons olive oil, divided ⓘ
- 1 small onion, thinly sliced ⓘ
- 2 garlic cloves, minced ⓘ
- 1/4 cup dry white wine ⓘ
- 1 (13.75-ounce) can artichokes, drained and coarsely chopped ⓘ
- 1 tablespoon drained capers ⓘ
- 2 cups cherry tomatoes, halved
- 1/2 teaspoon salt, divided ⓘ
- 1/4 cup chopped fresh flat-leaf parsley ⓘ
- 4 (5- to 6-ounce) tuna steaks ⓘ
Instructions
- Heat 1 tablespoon oil in a large skillet over medium heat. Add onion, and saute 5 minutes or until tender. Stir in garlic, and cook 1 minute. Add wine, artichokes, and capers; bring to a boil. Reduce heat to low, cover, and cook 5 minutes. Stir in tomatoes and 1/4 teaspoon salt. Cover and cook about 3 minutes or just until tomatoes are wilted. Remove from heat, and stir in parsley. Meanwhile, heat a large skillet over medium-high heat. Add remaining 2 teaspoons oil. Sprinkle tuna with peppercorns and remaining 1/4 teaspoon salt. Place tuna in skillet, and cook 2 to 4 minutes on each side or to desired degree of doneness. Serve with artichoke relish.
