Peppered Pan Potatoes feature thinly sliced potatoes layered with herbs, onions, and butter, creating a crispy, flavorful dish perfect for family dinners or casual gatherings.

Ingredients

  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. dried leaf basil
  • 1/4 tsp. dried leaf thyme
  • 6 Tbsp. butter or margarine
  • 2 lb. potatoes
  • 1/3 c. finely chopped onion

Instructions

  1. In a small bowl, combine salt, pepper, basil, and thyme.
  2. Place 2 tablespoons of butter in a 10-inch nonstick skillet and melt.
  3. Line the bottom of the skillet with overlapping slices of potatoes in a circular pattern.
  4. Sprinkle part of the salt mixture over the potatoes.
  5. Add 2 tablespoons of chopped onion on top.
  6. Pour 4 tablespoons of melted butter over the layered potatoes.
  7. Repeat layering with remaining potatoes, salt mixture, onion, and butter as needed.
  8. Cook until potatoes are tender and golden brown, about 30 minutes.
