Peppermint Taffy

Ingredients

  • 1 c. sugar
  • 2/3 c. water
  • 2 Tbsp. butter
  • 1 Tbsp. peppermint extract
  • 3/4 c. light corn syrup
  • 1 Tbsp. cornstarch
  • 1 tsp. salt
  • 8 to 10 drops red food coloring

Instructions

  1. Grease 2 baking pans (8 x 8 x 2-inches) with butter or margarine.
  2. Heat all ingredients, except peppermint extract and food coloring, in a saucepan over medium heat until just boiling, stirring constantly.
  3. Cook without stirring until the mixture reaches 256° on a candy thermometer, about 30 minutes.
  4. Remove from heat and add peppermint extract to the mixture.
  5. Pour half of the mixture into one prepared pan.
  6. Add red food coloring to the remaining mixture and pour into the other pan.
  7. Let both pans cool for about 15 minutes until the mixture is cool in the center.
  8. Fold, double, and pull each color of taffy until stiff and light in color.
  9. Pull each color into long strips and twist them together.
  10. Cut the twisted taffy into 1 to 3-inch sections with scissors.
  11. Wrap each piece with wax paper to prevent shape loss.
