Oven Potato Puff
A creamy, cheesy potato casserole with tender mashed potatoes, onions, and a golden brown top, perfect for family dinners or holiday gatherings.

- Peel and quarter the potatoes.
- In a 3-quart covered saucepan, cook potatoes in boiling salted water for 20 minutes until tender. Drain and mash.
- Cover and set aside.
- Butter a 2-quart baking dish.
- In a large mixing bowl at high speed, beat cottage cheese and eggs for 2 minutes.
- At low speed, beat in sour cream, chopped onion, butter, salt, and pepper.
- Add mashed potatoes and beat until well blended.
- Transfer the mixture to the prepared baking dish.
- If making ahead, cover and refrigerate until 30 minutes before baking.
- About 1 hour before serving, drizzle the top of the potatoes with butter.
- Bake in a preheated 325°F oven for 60 minutes or until heated through and lightly browned.
