Ingredients

  • 5 medium Russet potatoes
  • 1 cup small curd cottage cheese
  • 2 eggs
  • 1 cup sour cream
  • 1/3 cup chopped onion
  • 1/4 cup butter or margarine
  • 1 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Peel and quarter the potatoes.
  2. In a 3-quart covered saucepan, cook potatoes in boiling salted water for 20 minutes until tender. Drain and mash.
  3. Cover and set aside.
  4. Butter a 2-quart baking dish.
  5. In a large mixing bowl at high speed, beat cottage cheese and eggs for 2 minutes.
  6. At low speed, beat in sour cream, chopped onion, butter, salt, and pepper.
  7. Add mashed potatoes and beat until well blended.
  8. Transfer the mixture to the prepared baking dish.
  9. If making ahead, cover and refrigerate until 30 minutes before baking.
  10. About 1 hour before serving, drizzle the top of the potatoes with butter.
  11. Bake in a preheated 325°F oven for 60 minutes or until heated through and lightly browned.
