Ingredients

  • 1 cup sugar
  • 3/4 cup light corn syrup
  • 2/3 cup water
  • 1 tablespoon cornstarch
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1 tablespoon peppermint extract
  • 8 to 10 drops red food color

Instructions

  1. Grease baking pans with some butter.
  2. Heat all ingredients except the peppermint extract and food color just to boiling in a saucepan over medium heat, stirring constantly.
  3. Cook without stirring to 256° on a candy thermometer or until a small amount of the mixture dropped into very cold water forms a ball, about 30 minutes.
  4. Remove from heat and stir in 1 tablespoon of peppermint extract.
  5. Pour half the mixture into one of the buttered pans.
  6. Stir 8 to 10 drops of red food color into the remaining mixture, then pour into the other buttered pan.
  7. Let cool for 15 to 20 minutes.

Tips & Substitutions

Ensure your saucepan is large enough to prevent overflow during boiling. If the mixture seems too sticky, lightly dust your hands with cornstarch while handling. You can substitute peppermint extract with other flavors like vanilla or almond for a different taste. For a fun twist, consider mixing in some crushed peppermint candies before pouring into the pans.

Serving Suggestions

Cut the taffy into small pieces for easy serving and enjoy as a sweet treat on its own. These peppermint taffies pair beautifully with a warm cup of cocoa or coffee. For a festive touch, consider serving them alongside other sweets like Rich Fudge or Peanut-Oatmeal Cookies during holiday gatherings.

Storage & Reheating

Store the cooled taffy in an airtight container at room temperature. To prevent sticking, you can layer pieces of wax paper between the taffy. If you want to enjoy them later, simply unwrap and let them sit out for a few minutes to soften before serving.

Frequently Asked Questions

Why did my taffy not set properly?

If your taffy didn't set, it may not have reached the correct temperature. Use a candy thermometer to ensure you cook it to 256°F. Alternatively, if it was stirred too much while cooking, it could have affected the texture. Make sure to follow the cooking instructions carefully for best results.

Can I use other flavors instead of peppermint?

Absolutely! While peppermint is traditional, you can experiment with different extracts like vanilla, almond, or even fruity flavors such as strawberry or orange. Just make sure to adjust the amount based on the strength of the extract you choose.

How do I prevent the taffy from sticking together?

To prevent the taffy from sticking, store individual pieces wrapped in wax paper or parchment. You can also lightly coat the pieces with a dusting of cornstarch. This will help keep them separate and easy to enjoy.
