Ingredients

  • 3.5 oz. uncooked spiral pasta
  • 2 c. cherry or grape tomatoes, halved
  • 1/2 c. chopped green onions
  • 1/4 c. olive oil
  • 1/4 c. white wine vinegar
  • 8 oz. hard cheese (your favorite)
  • 2 oz. pepperoni (ham or turkey)
  • 1/2 tsp. Italian seasoning

Instructions

  1. Cook the spiral pasta according to package instructions, then rinse with cold water and drain.
  2. In a large bowl, mix the cooked pasta with cherry or grape tomatoes, chopped green onions, sliced pepperoni, and grated hard cheese.
  3. In a small bowl, whisk together olive oil, white wine vinegar, and Italian seasoning.
  4. Pour the dressing over the pasta mixture and toss to combine.
  5. Refrigerate for at least 1 hour before serving.
