  • 1/2 cup chopped onion or scallions
  • 3/4 cup Italian sausage, fried loose and drained

Instructions

  1. Beat eggs in a bowl.
  2. Add salt, pepper, parsley, milk, mozzarella, and Parmesan cheeses.
  3. Melt butter in a large 12-inch or larger skillet over medium heat.
  4. Add fried sausage, chopped onion or scallions, chopped bell pepper, mushrooms, and sliced pepperoni. Cook for 1 minute.
  5. Add cooked asparagus or green beans; stir and blend.
  6. Pour the egg mixture into the skillet.
  7. Turn down heat to low.
  8. Cook until the mixture has set and thickened, about 10 to 12 minutes.
  9. Under the broiler, cook for 30 seconds to 1 minute until the top has set.
  10. Loosen the frittata with a spatula and slide onto a warm platter.
