Phyllo Fruit Rolls

Ingredients

  • 1 None green apple, cored and grated
  • 1 cup golden raisins, coarsely chopped
  • 1/4 cup finely chopped dried apricots
  • 1/4 cup finely chopped dried peaches
  • 1/2 cup chopped walnuts, plus 1 tbsp, for sprinkling
  • 1 tbsp Grand Marnier
  • 2 tsp brown sugar
  • 5 sheets phyllo dough

Instructions

  1. Preheat the oven to 350°F. Line a baking pan with parchment paper.
  2. For the fruit filling, squeeze juice from grated apple; discard juice. Combine apple, dried fruit, nuts, Grand Marnier and brown sugar in a medium bowl; mix well. Cover and set aside 10 mins.
  3. Place a sheet of phyllo on work surface. Brush with melted butter. Continue layering with remaining phyllo, brushing each sheet with butter. Cut in half lengthwise into 2 long strips.
  4. Spoon fruit mixture in a thin log shape, along length of each strip. Roll over to enclose filling. Brush top with remaining butter.
  5. Cut each roll on the diagonal into 8 slices. Place on prepared baking pan. Sprinkle with additional walnuts.
  6. Bake 15-20 mins, until rolls are crisp and golden.
