Ingredients

  • 8 c. squash, sliced
  • 2 c. onions, sliced
  • 1 large red bell pepper
  • 2 c. bell pepper
  • 2 c. vinegar
  • 3 c. sugar

Instructions

  1. Soak the sliced squash in 2/3 cup salt with just enough water to cover the squash. Let it sit for some time, then drain.
  2. Bring the vinegar and sugar to a boil and simmer for 15 minutes to make the syrup.
  3. Add the drained squash and sliced onions to the syrup and bring to a rolling boil.
  4. Pack the hot mixture into sterilized jars and seal.
