Tangy pickled crab apples combine sweet, spiced, vinegary flavors, perfect for snacking or garnishing cheese platters, appealing to those who enjoy homemade preserves with a spicy kick.

Ingredients

  • 16 lb. apples
  • 10 c. vinegar
  • 8 c. water
  • 16 c. sugar
  • 3 Tbsp. whole cloves
  • 9 sticks cinnamon
  • 1 Tbsp. ground ginger

Instructions

  1. Wash the apples, remove blossom ends, and prick each apple.
  2. Tie the whole cloves and cinnamon sticks in a spice bag.
  3. Bring vinegar, water, sugar, ground ginger, and spice bag to a boil.
  4. Add apples to the boiling syrup a few at a time, removing each batch before adding the next.
  5. Pour the syrup over the apples and let stand overnight.
  6. Remove the spice bag from the apples.
  7. Pack the apples into hot jars.
  8. Bring the remaining syrup to a boil.
  9. Pour the boiling syrup over the packed apples.
  10. Process the jars in boiling water bath for 30 minutes.
