Ingredients

  • 20 herring fillets
  • 6 1/4 cups white vinegar
  • 2 1/2 cups water
  • 3 cups sugar
  • 1 can bay leaves
  • 1 can allspice
  • red onion, sliced

Instructions

  1. Soak herring fillets in cold water for 6 hours, changing the water often. Rub fillets under cold water until not slick.
  2. Combine vinegar, water, sugar, bay leaves, and allspice; heat until sugar dissolves. Cool the mixture.
  3. Layer slices of herring, sliced red onion, bay leaves, and whole allspice in a jar or dish.
  4. Add the cooled brine over the layered ingredients and let stand for 3 days before serving.
