  1. Wash mirliton, cut in half to remove seed.
  2. Slice mirliton lengthwise. Chop onions and peppers into large pieces.
  3. Combine all ingredients except mirliton in a large pot.
  4. Bring the mixture to a boil.
  5. Add mirliton to the boiling mixture and heat just long enough to warm through, but do not boil.
  6. Sterilize jars and pack the cooked mirliton into the jars.
  7. Pour the hot vinegar mixture over the mirliton in jars.
  8. Seal the jars and process them in a hot water bath for 10 minutes.
  9. This recipe can be doubled, quadrupled, or more; it still turns out wonderful.
