Pickled Mirliton

- Wash mirliton, cut in half to remove seed.
- Slice mirliton lengthwise. Chop onions and peppers into large pieces.
- Combine all ingredients except mirliton in a large pot.
- Bring the mixture to a boil.
- Add mirliton to the boiling mixture and heat just long enough to warm through, but do not boil.
- Sterilize jars and pack the cooked mirliton into the jars.
- Pour the hot vinegar mixture over the mirliton in jars.
- Seal the jars and process them in a hot water bath for 10 minutes.
- This recipe can be doubled, quadrupled, or more; it still turns out wonderful.
