Ingredients

  • 2 lb. raw, peeled and deveined shrimp
  • 2 medium white or purple onions, sliced into rings
  • 1 c. vegetable oil
  • 1 1/2 c. white vinegar
  • 1/2 c. sugar
  • 1 1/2 tsp. salt
  • 1 1/2 tsp. celery seed
  • 4 Tbsp. capers with juice

Instructions

  1. Place the shrimp in boiling salted water and simmer for 3 to 5 minutes until pink and tender.
  2. Drain the shrimp and rinse with cold water, then chill.
  3. In a jar or bowl, combine the vegetable oil, white vinegar, sugar, salt, and celery seed to make the pickling brine.
  4. Layer the cooked shrimp, sliced onions, and capers with juice in a sterilized jar or container.
  5. Pour the prepared brine over the ingredients, ensuring they are fully submerged.
  6. Seal the container and refrigerate for at least 24 hours before serving to allow flavors to meld.
