Picnic Peas
Ingredients
- 1 Tbsp. cooking oil ⓘ
- 1 c. chopped green pepper ⓘ
- 1 c. chopped onions ⓘ
- 1 c. minced celery ⓘ
- 1 Tbsp. sugar ⓘ
- 1 bay leaf ⓘ
- 1 (15 oz.) can black-eyed peas, rinsed and drained ⓘ
- 1 (14 1/2 oz.) can tomatoes, chopped (liquid reserved)
- 1/2 tsp. salt ⓘ
- 1/4 tsp. pepper ⓘ
- 4 bacon slices, cooked and crumbled ⓘ
Instructions
- In a skillet heat oil over medium high.
- Saute green pepper, onion and celery.
- Add sugar, bay leaf, peas, tomatoes, half of the tomato juice, salt and pepper.
- Reduce heat and simmer 15 minutes.
- Remove to a bowl and sprinkle with bacon.
- Serve hot or room temperature.
- Yield:
- 6 servings.
