Ingredients

  • 1 Tbsp. cooking oil
  • 1 c. chopped green pepper
  • 1 c. chopped onions
  • 1 c. minced celery
  • 1 Tbsp. sugar
  • 1 bay leaf
  • 1 (15 oz.) can black-eyed peas, rinsed and drained
  • 1 (14 1/2 oz.) can tomatoes, chopped (liquid reserved)
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 4 bacon slices, cooked and crumbled

Instructions

  1. In a skillet heat oil over medium high.
  2. Saute green pepper, onion and celery.
  3. Add sugar, bay leaf, peas, tomatoes, half of the tomato juice, salt and pepper.
  4. Reduce heat and simmer 15 minutes.
  5. Remove to a bowl and sprinkle with bacon.
  6. Serve hot or room temperature.
  7. Yield:
