Ingredients

  • 3 cups flour
  • 1 teaspoon salt
  • 1 cup shortening
  • 1 egg yolk
  • milk
  • 1 egg white
  • 1 teaspoon water

Instructions

  1. Combine flour and salt; cut in shortening until mixture resembles coarse crumbs.
  2. Measure 1 egg yolk and enough milk to make 2/3 cup total; reserve egg white.
  3. Beat the reserved egg white with 1 teaspoon water to make a glaze for the top crust.
  4. Add the egg yolk-milk mixture to the flour mixture and mix thoroughly.
  5. Roll out the crust on a floured surface or cloth in the usual manner.
  6. Let the crust rest for a few minutes or refrigerate briefly before rolling for easier handling.
