Ingredients

  • 1 pkg. yellow cake mix
  • 4 eggs or egg substitute
  • 1 c. applesauce
  • 1 small can mandarin oranges
  • 1 (4 serving) pkg. instant vanilla sugar-free pudding
  • 1 (20 oz.) can crushed pineapple with juice
  • 1 (8 oz.) container lite Cool Whip

Instructions

  1. Use a 12-inch spring-form pan for assembling the cake.
  2. Mix the cake ingredients: yellow cake mix, eggs or egg substitute, and applesauce.
  3. Bake the cake according to the package instructions, then allow it to cool completely.
  4. Prepare the pudding as per package instructions and set aside.
  5. Drain the mandarin oranges and crushed pineapple, reserving the juice.
  6. Fold the crushed pineapple with juice into the pudding.
  7. Once the cake is cooled, spread the pudding mixture evenly over the cake.
  8. Top with drained mandarin oranges and Cool Whip.
  9. Chill the cake for at least 2 hours before serving.
