Piggies (Stuffed Cabbage)

Ingredients

  • 1 to 1 1/4 lb. ground beef
  • 1 c. rice
  • salt and pepper to taste
  • 1 small onion, chopped
  • 1 medium-large cabbage
  • 2 to 4 cans tomato soup
  • 1 to 2 Tbsp. brown sugar
  • water

Instructions

  1. Remove hard core from cabbage and place head of cabbage in pot of boiling water.
  2. Let cabbage steam in covered pot 10 to 15 minutes (with heat off or warm).
  3. While cabbage is steaming, mix together ground beef, rice, salt, pepper and onion.
  4. When cabbage leaves are easily removed from head of cabbage, fill leaf with approximately 1 heaping tablespoonful of ground beef rice mixture. Fold bottom of leaf up and both sides in.
  5. Roll to close.
  6. Place cabbage roll, flap side down, in baking dish.
  7. Mix tomato soup with about 1/2 can water per can of soup used.
  8. Add brown sugar.
  9. Pour over cabbage rolls.
  10. Cover.
  11. Bake at 350° for about 1 1/2 hours. Can also be done in slow cooker.
