Ingredients

  • 1 egg (60 grams)
  • 4 Tbsp. sugar
  • 1 c. self-rising flour
  • 3/4 c. milk
  • 1/4 tsp. bicarbonate of soda
  • 1 Tbsp. melted butter

Instructions

  1. Beat the egg and sugar together until well combined.
  2. Dissolve the bicarbonate of soda in the milk.
  3. Add the self-rising flour to the egg mixture, alternating with the milk mixture, and mix until smooth.
  4. Stir in the melted butter.
  5. Heat a greased pan or griddle until hot.
  6. Drop dessertspoonfuls of batter onto the pan or griddle.
  7. Cook until browned on both sides, then lift out and drain on absorbent paper.
  8. Serve topped with jam and whipped cream.
