- Beat the egg and sugar together until well combined.
- Dissolve the bicarbonate of soda in the milk.
- Add the self-rising flour to the egg mixture, alternating with the milk mixture, and mix until smooth.
- Stir in the melted butter.
- Heat a greased pan or griddle until hot.
- Drop dessertspoonfuls of batter onto the pan or griddle.
- Cook until browned on both sides, then lift out and drain on absorbent paper.
- Serve topped with jam and whipped cream.
