Ingredients

  • 4 Tbsp. corn oil
  • 4 Tbsp. chopped onion
  • 2 c. raw Busmati rice
  • 1/4 tsp. ground turmeric
  • 1/2 tsp. salt
  • 2 whole cloves
  • 3 bay leaves
  • 3 1/4 c. water

Instructions

  1. Heat the oil in a pan and, over moderate heat, fry the chopped onion for 2 minutes, or until golden.
  2. Add the rinsed rice and stir well. Add the ground turmeric and salt, then continue to fry the rice lightly for 2 minutes.
  3. Add water, whole cloves, and bay leaves; stir.
  4. Bring to a boil and immediately turn the heat to low.
  5. Cover the pan and cook for 15 minutes.
  6. Stir once toward the end of the cooking time.

Tips & Substitutions

For a richer flavor, you can substitute half of the water with vegetable broth. If you don't have Basmati rice, Jasmine rice can be a suitable alternative. Ensure to rinse the rice thoroughly to remove excess starch, which helps achieve a fluffier texture. For added depth, consider incorporating some saffron strands while cooking.

Serving Suggestions

Serve Pilau as a flavorful base for grilled meats or vegetables, or pair it with a refreshing Basil Tomato Salad for a light meal. It complements dishes like Herbed Vegetables perfectly, making for a delightful Mediterranean-inspired feast. Garnish with fresh herbs for an extra touch.

Storage & Reheating

Allow leftover Pilau to cool completely before transferring it to an airtight container. Store in the refrigerator for up to 3 days. To reheat, add a splash of water and microwave or heat on the stove over low heat, stirring occasionally to prevent sticking. It can also be enjoyed cold as a salad.
