- Cut the zucchini in half lengthwise, then into ½-inch slices.
- Remove seeds and membrane from the red bell peppers and cut into diagonal pieces about 1 inch.
- Heat 3 to 4 tablespoons of olive oil in a heavy skillet over medium-high heat.
- Add the celery and stir-fry until barely tender.
- Add the zucchini and peppers and stir-fry until all vegetables are crisp-tender.
- Add salt, pepper, and chopped fresh oregano, and cook for 30 seconds longer.
- Stir in snipped fresh chives and serve immediately.
