Ingredients

  • 4 stalks celery
  • 2 medium zucchini
  • 2 red bell peppers
  • 3 to 4 Tbsp. olive oil
  • pinch of salt
  • pinch of pepper
  • 1 tsp. chopped fresh oregano
  • 4 Tbsp. snipped fresh chives

Instructions

  1. Slice the celery into diagonal pieces about 1½ inches thick.
  2. Cut the zucchini in half lengthwise, then into ½-inch slices.
  3. Remove seeds and membrane from the red bell peppers and cut into diagonal pieces about 1 inch.
  4. Heat 3 to 4 tablespoons of olive oil in a heavy skillet over medium-high heat.
  5. Add the celery and stir-fry until barely tender.
  6. Add the zucchini and peppers and stir-fry until all vegetables are crisp-tender.
  7. Add salt, pepper, and chopped fresh oregano, and cook for 30 seconds longer.
  8. Stir in snipped fresh chives and serve immediately.
