A sweet and tangy pineapple and squash preserve that combines tender squash with tropical pineapple, perfect for serving chilled as a unique side or dessert accompaniment.

Ingredients

  • 3 qt. squash, cubed
  • 1 large (1 lb. 4 oz.) can crushed or chunk pineapple
  • 2 c. water
  • 2 c. sugar

Instructions

  1. Do not peel young, tender squash.
  2. Combine squash, water, sugar, and vinegar in a large pot.
  3. Cook until the squash is tender, but not overcooked.
  4. Add pineapple and bring the mixture back to a boil.
  5. Spoon into sterilized jars and seal.
  6. Serve chilled.
