Ingredients

  • 20 oz. can crushed pineapple, undrained
  • 2 Tbsp. sugar
  • 6 oz. pkg. apricot jello
  • 2 c. buttermilk
  • 8 oz. carton Cool Whip
  • 1 c. chopped pecans

Instructions

  1. Combine sugar and crushed pineapple in a saucepan. Bring to a boil, stirring constantly. Remove from heat.
  2. Pour the pineapple mixture into a bowl and add the apricot jello. Stir until the jello is dissolved.
  3. Fold in buttermilk, Cool Whip, and chopped pecans.
  4. Sprinkle chopped pecans over the top. Chill until the salad is firm before serving.
