- Preheat oven to 400°F.
- Spray an 8 x 8 x 2-inch pan with non-stick spray.
- Drain crushed pineapple, reserving the juice.
- Sprinkle brown sugar evenly onto the bottom of the prepared pan.
- Layer crushed pineapple over the brown sugar.
- Slice maraschino cherries in half and arrange, cut side up, over the pineapple.
- In a medium bowl, combine flour, baking powder, and salt; set aside.
- In a large bowl, mix applesauce, sugar, reserved pineapple juice, and egg whites until well combined.
- Add the flour mixture to the wet ingredients and mix just until blended.
- Gently pour the batter over the pineapple and cherries in the pan.
- Bake in the preheated oven for 30 to 40 minutes, until a toothpick inserted in the center comes out clean.
- Allow to cool for 10 minutes in the pan.
- Invert the cake onto a serving dish and cool completely before serving.
