Ingredients

  • 8 oz. can crushed pineapple, drained
  • 1/2 cup brown sugar
  • 6 maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup applesauce
  • 1 cup sugar
  • 3 egg whites

Instructions

  1. Preheat oven to 400°F.
  2. Spray an 8 x 8 x 2-inch pan with non-stick spray.
  3. Drain crushed pineapple, reserving the juice.
  4. Sprinkle brown sugar evenly onto the bottom of the prepared pan.
  5. Layer crushed pineapple over the brown sugar.
  6. Slice maraschino cherries in half and arrange, cut side up, over the pineapple.
  7. In a medium bowl, combine flour, baking powder, and salt; set aside.
  8. In a large bowl, mix applesauce, sugar, reserved pineapple juice, and egg whites until well combined.
  9. Add the flour mixture to the wet ingredients and mix just until blended.
  10. Gently pour the batter over the pineapple and cherries in the pan.
  11. Bake in the preheated oven for 30 to 40 minutes, until a toothpick inserted in the center comes out clean.
  12. Allow to cool for 10 minutes in the pan.
  13. Invert the cake onto a serving dish and cool completely before serving.
