Pineapple Beans With Meatballs

Ingredients

  • 1 1/2 lb. ground beef
  • 1 medium onion, chopped
  • 1 Tbsp. salt
  • 2 Tbsp. oil
  • 1 (20 oz.) can chunk pineapple with 1/2 c. juice
  • 1 c. ketchup
  • 1/4 c. brown sugar, packed
  • 2 tsp. dry mustard
  • 2 Tbsp. vinegar
  • 2 (16 oz.) cans pork and beans

Instructions

  1. Mix beef, onion and salt into small balls.
  2. Brown in oil. Drain pineapple, keeping 1/2 cup juice.
  3. Combine juice, ketchup, vinegar, brown sugar and mustard.
  4. Bring to a boil.
  5. Reduce heat and simmer for 5 minutes.
  6. Combine meatballs, sauce, beans and pineapple in a lightly greased 3-quart casserole dish.
  7. Bake 45 minutes in a 375° oven.
