Pineapple Boiled Fruit Cake

Ingredients

  • 500 g mixed dried fruit
  • 1 cup brown sugar
  • 155 g butter
  • 1 (450 g) can crushed pineapple
  • 2 eggs
  • 1 cup plain flour
  • 1 1/2 cups self raising flour

Instructions

  1. Place mixed fruit, sugar, butter and pineapple including juice into a saucepan.
  2. Simmer for 5 minutes.
  3. Allow to cool.
  4. Beat eggs slightly and stir into fruit mixture.
  5. Sift together the flours, spice and bircarbonate of soda.
  6. Fold into fruit mixture.
  7. Place mixture into a greased and lined 30cm cake tin.
  8. Bake in a moderate oven for 90 minutes.
  9. Test after 90 minutes.
