Ingredients

  • 1/3 cup sugar
  • 2 eggs
  • 3 teaspoons baking powder
  • 6 maraschino cherries
  • 1/3 cup unsalted margarine
  • 2 cups flour
  • 1 cup crushed pineapple in juice

Instructions

  1. Beat sugar and margarine until light and fluffy.
  2. Add eggs and mix well.
  3. Mix flour and baking powder together.
  4. Combine sugar and flour mixtures.
  5. Blend well to combine.
  6. Add crushed pineapple and mix to incorporate.
  7. Pour batter into a greased 9 x 5-inch pan.
  8. Bake at 350°F (175°C) for 1 hour.
  9. Cut into 20 slices.
