Ingredients

  • 20 oz. can juice packed crushed pineapple, chilled
  • 2 envelopes unflavored gelatin
  • 1 tsp. lemon juice
  • sugar substitute to equal 10 tsp. sugar

Instructions

  1. Drain pineapple juice into a pan.
  2. Sprinkle gelatin over the juice and add half of the pineapple chunks.
  3. Wait one minute for the gelatin to soften.
  4. Heat gently until the gelatin granules melt.
  5. Remove from heat.
  6. Stir in lemon juice and sugar substitute.
  7. Spread the mixture into an 8‑inch square no‑stick pan.
  8. Chill until set.
  9. Store refrigerated.
  10. Each square contains about 10 calories.
