Delightful pineapple coconut tartlets feature sweet pineapple, toasted coconut, and flaky pie crust, offering a tropical treat perfect for parties or special occasions.

Ingredients

  • 1 can Dole crushed pineapple in juice, drained
  • 1 1/2 tsp sugar
  • 1 tsp flour
  • 1/8 tsp cinnamon
  • pinch of salt
  • 2 Tbsp strawberry jam
  • 1 pkg refrigerated pie crusts
  • 1 egg
  • 1 Tbsp water
  • 2 Tbsp shredded coconut

Instructions

  1. Combine drained crushed pineapple, sugar, flour, cinnamon, and salt in a bowl.
  2. Cut 5 to 6 circles (3 3/4 to 4 inches) in diameter from each pie crust using biscuit cutters.
  3. Place the circles on cookie sheets coated with cooking spray.
  4. Mix egg and water to create an egg wash.
  5. Brush the edge of each dough circle with the egg mixture.
  6. Place 1 tablespoon of pineapple filling in the center of each circle.
  7. Fold the edges over the filling, overlapping to make pleats.
  8. Brush the outer edge of each tartlet with the egg mixture.
  9. Sprinkle the edges with additional sugar.
  10. Sprinkle shredded coconut over the tartlets.
  11. Bake in a 400°F oven for 18 to 20 minutes until golden.
  12. Cool the tartlets and dollop with strawberry jam before serving.
