Pineapple Cream Fudge

Creamy pineapple-flavored fudge combines white chocolate and marshmallow creme with a tropical twist, perfect for holiday treats or sweet gatherings, appealing to all ages.

Ingredients

  • 2 1/2 cups sugar
  • 1/2 cup margarine or butter
  • 5 oz evaporated milk
  • 1 cup pineapple pastry filling
  • 7 oz marshmallow creme
  • 1 lb white chocolate coating
  • 1/4 teaspoon pineapple candy oil flavoring
  • 1 tablespoon clear Karo syrup

Instructions

  1. Line a 9 x 13-inch pan with foil, extending over the sides, and butter the foil.
  2. In a large saucepan, combine sugar, margarine or butter, and evaporated milk.
  3. Bring to a boil, stirring constantly.
  4. Add pineapple pastry filling and bring to a boil again, stirring constantly.
  5. Continue boiling for 5 minutes over medium heat, stirring constantly.
  6. Remove from heat; add marshmallow creme and white chocolate coating, blending until smooth.
  7. Add pineapple candy oil flavoring and blend.
  8. Add Karo syrup and blend.
  9. Pour the mixture into the prepared pan.
  10. Cool to room temperature.
  11. Score the fudge into 36 or 48 squares.
  12. Refrigerate until firm.
  13. Lift the foil to remove the fudge from the pan, then peel off the foil.
  14. Cut through the scored lines with a large knife.
  15. Store in the refrigerator.
