Ingredients

  • 1/3 cup sugar
  • 4 teaspoons cornstarch
  • 1/4 teaspoon salt
  • 1 cup unsweetened pineapple juice
  • 1/4 cup orange juice
  • 3 teaspoons lemon juice
  • 2 eggs, beaten
  • 2 (3 oz.) packages cream cheese, softened

Instructions

  1. Combine sugar, cornstarch, and salt in a saucepan; blend in pineapple juice, orange juice, and lemon juice. Cook, stirring constantly, until mixture is clear, about 6 to 8 minutes.
  2. Slowly stir the mixture into the beaten eggs.
  3. Return the mixture to the saucepan and cook over low heat, stirring constantly, for 3 to 5 minutes.
  4. Remove from heat and cool for 5 minutes.
  5. Beat the cooled mixture into the softened cream cheese until smooth.
  6. Chill the dip overnight before serving.
