Ingredients

  • 1 lb. marshmallows
  • 1/2 c. milk
  • 1/2 c. pineapple juice
  • juice of 1/2 lemon
  • 1 pt. all-purpose cream, whipped
  • 1 c. crushed pineapple, drained
  • 12 crushed graham crackers

Instructions

  1. Place the marshmallows, milk, and pineapple juice in a double boiler over boiling water until the marshmallows melt.
  2. Allow the mixture to cool slightly, then fold in the whipped cream and drained crushed pineapple.
  3. Arrange a layer of graham crackers in a 9 x 13-inch pan, leaving some crackers for the top layer.
  4. Pour the marshmallow mixture over the crackers, spreading evenly.
  5. Cover with the remaining graham crackers.
  6. Refrigerate the dessert overnight to set before serving.
