Pineapple Mincemeat Cake

Ingredients

  • 1 pkg. yellow or white cake mix
  • 2 large cans crushed pineapple, well drained
  • 1 box mincemeat
  • 3/4 cup shredded coconut
  • 1 cup pecans

Instructions

  1. Grease and flour two 9-inch round pans.
  2. Mix cake according to box directions using pineapple liquid instead of oil and water.
  3. Add mincemeat and 1 cup of drained pineapple; mix well.
  4. Fold in pecans, if desired.
  5. Pour batter into prepared pans.
  6. Bake in a 350°F oven for 35 to 40 minutes.
  7. Remove from oven and cool on wire rack for 10 minutes.
  8. Carefully remove cakes from pans and cool completely.
  9. Place one cake layer on a serving plate.
  10. Spread with 1 cup of drained pineapple and pecans.
  11. Place the second layer on top.
  12. Spread with the remaining pineapple and pecans.
