Ingredients

  • 3 envelopes plain gelatin
  • 1/4 cup sugar
  • 1 cup crushed pineapple, drained with juice reserved
  • 3 cups pineapple-guava nectar or fruit nectar
  • 1 container sour cream (8 oz.)
  • 1/2 teaspoon salt

Instructions

  1. In a small saucepan, combine gelatin, sugar, and the reserved juice from the crushed pineapple.
  2. Cook over low heat for 5 minutes, until gelatin and sugar are dissolved, stirring constantly.
  3. Transfer the mixture to a large bowl; stir in crushed pineapple, nectar, sour cream, and salt until well combined.
  4. Chill for 1 1/2 hours, stirring occasionally, until the mixture reaches the consistency of unbeaten egg whites.
  5. Coat an 8-cup mold or bowl with nonstick cooking spray; pour in the gelatin-pineapple mixture.
  6. Chill for 8 hours or overnight until firm.
