  • 4 slices fresh pineapple
  • 1/4 cup apricot preserves
  • shredded coconut

Instructions

  1. Place each pineapple slice on an 8-inch square of heavy-duty foil.
  2. Fill the centers of each pineapple slice with 1 tablespoon of apricot preserves and shredded coconut.
  3. Fold the foil into a tight package around each pineapple slice.
  4. Heat on a preheated grill at low heat for 10 minutes or until the preserves have melted over the pineapple.
