Ingredients

  • 1 can (8 oz.) crushed pineapple in juice
  • 1 pkg. (3 oz.) raspberry gelatin
  • 1 can whole cranberry sauce
  • 1/2 cup chopped walnuts and pecans, mixed

Instructions

  1. Drain the crushed pineapple, reserving the juice.
  2. Add enough water to the pineapple juice to make 1 cup of liquid, then bring it to a boil.
  3. Add the raspberry gelatin to the boiling liquid and stir until dissolved.
  4. Break up the cranberry sauce and stir it into the gelatin mixture.
  5. Chill the mixture until it is slightly thickened.
  6. Add the drained pineapple and chopped nuts to the gelatin mixture and fold gently.
  7. Pour the mixture into a 1-quart mold and smooth the surface.
  8. Chill for about 4 hours until fully set.
  9. Unmold onto a serving plate before serving.
