Ingredients

  • 6 pineapple rings
  • 6 large marshmallows
  • 1 1/2 cups cooked sweet potatoes
  • 1 cup milk
  • 1/2 cup sugar
  • 1/2 cup raisins
  • 1/4 stick margarine
  • 1/2 teaspoon vanilla

Instructions

  1. Cream the cooked sweet potatoes with sugar, margarine, and milk until smooth.
  2. Add vanilla extract and raisins to the sweet potato mixture and mix well.
  3. Place pineapple rings on a baking sheet.
  4. Drop spoonfuls of the sweet potato mixture onto each pineapple ring.
  5. Top each filled pineapple ring with a marshmallow.
  6. Bake at 325°F (160°C) until marshmallows are golden brown, about 15 minutes.
