Ingredients

  • 1 large can sweet potatoes
  • 1 large egg
  • 1 small can chunk pineapple
  • 1/2 tsp salt

Instructions

  1. Drain the sweet potatoes and pineapple, saving the pineapple juice.
  2. Mash the sweet potatoes and add salt and the beaten egg.
  3. Create potato balls with a piece of pineapple in the center.
  4. Roll the balls in crushed cornflakes.
  5. Place the balls in a greased baking dish.
  6. Add the reserved pineapple juice and bake at 350°F for 20 to 25 minutes.
